Graduates Pinot Gris 2023
The winemaking and viticulture teams at Saint & Scholar are excited about the quality of the wine from the 2023 vintage. the cool, wet conditions provided a few challenges at times, but the overall result is outstanding.
Harvested at optimal flavour ripeness, the fruit is lightly pressed with only the free run juice used. The juice is kept cold and allowed to settle for a week, then it is racked and fermented for 7 to 10 days. Following fermentation, the wine is prepared for bottle. As we maintain a natural winemaking process, the colour of the wine often has a pink tinge to it.
