The winemaking and viticulture teams at Saint & Scholar are excited about the quality of the wine from the 2025 vintage.
The fruit is chosen for its expressive flavor. Harvest takes place in the cool of the morning, when acidity is at its freshest and most vibrant. Grapes are gently bag-pressed, with careful attention paid towards the end of the press cycle, as the skins hold the variety’s hallmark aroma and flavor.
The juice is settled for several days before racking, with a small portion of fluffy lees carried over to contribute texture and weight. Fermentation begins once the juice has gently warmed and yeast is added, running its course over 10 to 12 days. Afterward, the wine is racked off lees and kept cold to preserve freshness and purity until bottling.

Aromas of fresh grapefruit, passionfruit and cut grass.
Taste
Refreshing, with plenty of citrus, tropical fruits and melon characters on the palate, finishing with crisp, balanced acidity.
