The 2021 vintage was almost perfect, with a long, cool growing season, plenty of rain falling at the right time and slow ripening conditions resulting in flavoursome berry development.
This bright cool climate single vineyard Shiraz (or Syrah) was harvested in the cool of the morning in early April. The wine was destemmed and cold soaked for 12 hours, then warmed with yeast added to start fermentation. The ferment was pumped over twice a day for 7 days, providing air, but also making sure the wine didn’t become too tanic. Following fermentation the wine was pressed, settled for a day and then matured in French oak barriques for 7 months of which 10% was new.

Ruby red to deep Burgundy.
Bouquet
Bright red berry fruits of raspberry and strawberry.
Palate
Blackberry and plum fill the front palate, with a nice layer of spice in the middle with just the right amount of soft French oak tannins at the back.
Pair with
Barbecued steak or slow roasted beef dishes.
